No. I learned you can never do less than 3.

Some context, from the OU.

Why do some have the minhag to cook at least three eggs in a pot at one time?

When boiling eggs in shell, there is no way to tell ahead of time if the eggs contain a blood spot. Therefore, there is a minhag to cook three eggs together, so that even if one of the eggs contains a blood spot, that egg would be batel among the other two eggs and the pot would not need Kashering. At the present time eggs are not fertilized, and even if they contain blood spots, one need only remove that spot of blood, and the rest of the egg can be eaten. Nonetheless, many maintain the minhag to cook at least three eggs together.

I heard that the halacha is two eggs, but chassidim have a minhag to only cook an odd number of eggs, so I never do less than three

The truth is, I don’t know so much about this minhag… I just know that I’m cared to only cook an odd number of hard boiled eggs together. I assume it’s chassidish cuz we’re heimish and most of our minhagim are chassidish but I don’t really know

I'm a true-blue Litvak and we always cook three eggs, so, no, it's not Chassidish at all.
