This couldn't have been easier and the kids loved it.
Dump and Done Ramen Salad
Source: Chrissy Teigen, - Cravings: Recipes for All the Food You Want to Eat
“PREP TIME: 5 minutes TOTAL TIME: 3 hours
3 (3-ounce) packages chicken-flavored ramen
1 (12-ounce) package broccoli slaw
1 cup thinly sliced red onion
1 cup frozen peas
¾ cup corn kernels (fresh, frozen, or canned—but c’mon, it’s got to be canned)
½ cup sugar
⅓ cup vegetable oil
½ cup apple cider vinegar
1 cup roasted, salted sunflower seeds
ETA I cut up the slices of onion so they weren’t so big - not the whole slice. Also if you rinse raw onions, it takes away a bit of the sharpness if you have sensitive palates. 🤫
Set the seasoning packets from the ramen aside. Crush the ramen noodles into a salad bowl, then add the slaw, onion, peas, and corn and toss.
In a microwave-safe bowl, combine the sugar, oil, vinegar, and ramen seasoning packets and microwave on high for 1 minute. Pour the hot dressing over the slaw mixture and toss. Refrigerate for 3 hours or overnight.
Toss in the sunflower seeds just before serving

Recipe looks great! Thanks for sharing!
I've got two questions:
- won't the noodles get soggy if the salad is marinating overnight?
- why the need to use frozen peas, or is canned good?

Ramen noodles aren’t like wonton noodles. They need to get soft like soup noodles. That is why you can’t serve them immediately. This isn’t like Chinese Chicken Salad where you sprinkle the wontons on last minute for crunch. It is also why you need to heat up the liquid before adding to the slaw and noodle mixture.
Sure you could used canned peas but the frozen peas are better tasting and have a better texture since you aren’t cooking them but just letting them defrost so they have a bit more crunch and taste much fresher. 😀
