I’m doing some research now as I want to start baking my own sourdough.
Looking for tips and advice.
Wondering what is the healthiest flour to use for starter? Ideally I’d like to make spelt only but I’m seeing people say that it doesn’t rise as nicely.
What is the healthiest least processed flour to use?
Whole wheat, rye, whole spelt?
Any links would be appreciated.

I would say I'm self taught. A friend coached me through my first few attempts but I've been on my own since. I bake using organic non irradiated white spelt. They generally rise beautifully!

For both. I usually bake white spelt flour every week but I like the texture and how much better my stomach feels from sourdough.

I got the starter originally from a friend (hi if you recognize me Hi) I don't know what flour she used, but I've been feeding it with this flour ever since.
