I've been trying a new challah recipe the last couple of weeks. Rises beautifully, puffs up in the oven, but really deflates as they're cooling and they end up looking pretty flat. They're still fluffy on the inside and delicious, but not the nicest presentation. Any ideas what could be causing that?

Are you putting the oven too hot and they're rising too quickly? I actually don't preheat my oven before putting my challos in and then they rise slowly as the oven heats up.
Or try another shape for your challos. Different amount of braids, or round etc.

Hmm ok I'll try not preheating next time and see if it makes a difference. I just do it on 350

It's more yeast than I've had in other recipes. 2tbsp for 7 cups flour. Is there such a thing as too much yeast?
I let it rise for an hour or 2 before braiding and 30/40 minutes again after
