I make my kids "date butterflies"
Split the date to check it, and then spread it wide so you have two ovals connected down the middle.
Press the open date into dried coconut so it sticks.
Put a walnut in the center, and almonds in a pattern around the edges.
Voila! Butterfly snack.

Cut open and check. Stuff with peanut butter and a pecan. Close and dip in melted chocolate. I don’t remember fully but I also saw there’s a type of course salt you can sprinkle on.

Measurements are approximate.
12 medjool dates, pitted and sliced open almost all the way
3/4 cup ricotta cheese
salt to season
1-2 tsp maple syrup (optional)
honey for drizzling.
2 tablespoons shelled salted pistachios, chopped
Mix the cheese with salt and maple syrup if desired. Stuff each date with the cheese mixture. Place in a shallow pan. Drizzle honey on top. Sprinkle the pistachios over the honey. Bake at 350 for a few minutes until warm.
You don't have to bake them but I like them warm, rather than room temperature. They are softer that way, too.

Blend them with chocolate powder and make chocolate date balls. You can roll them in coconut, sprinkles, or chocolate powder.
