I don't bake for pesach (no gebrokts)....so the only dessert I make is parve ice cream from eggs, sugar, oil, etc.

At least it doesn't have HF corn syrup? lol

I'm sure this sounds pretty basic and nerdy but I make sorbet with frozen fruit, a cup of juice like orange juice or grape juice and up to a cup of sugar depending on the sweetness of the fruit. Blend.
I then buy those 2 oz plastic dressing cups and I put them in there and my kids love choosing strawberry mango peach Etc.
Between carpools also has this very easy grape juice granita that I make and put in the cups too.

I make a vanilla pudding sponge cake (non-gebroks), a really amazing brownie recipe from this site (also non-gebroks), and a family sponge cake recipe (a million gebroks).

I guess I should define healthy-trying to avoid white sugar and minimal if no eggs.

I make it with almond flour and coconut sugar if I could find. Dark chocolate chips. Coconut oil.

There are so many baked goods you can make without using matzah meal. I make many baked goods without gebrokts.

The Bas Hinda chocolate torte!! I found it on this website. I double the recipe and bake in a 9x13.

Baked apples make most of us happy. I cover them and put in the oven when I'm baking other things. Sometimes I'll make a non gebrocks crumble with potato starch, a little ool and brown sugar and cinnamon, and people who want can sprinkle it on theirs.

We didn't eat gebroks growing up but my mother made TONS of cakes using potato starch as the base.

Why are eggs unhealthy? Unless you mean raw eggs?
Our fave Pesach desserts are loaded with sugar and eggs so sorry can't help you.

But fruit sorbets are really good. You can skip the sugar if you don't mind not as sweet. Fresh mango with orange juice (can be homemade) and a little lemon juice is delicious. Blend all together. Freeze and blend again. I don't have exact measurements on hand, I take out my recipes a week before Pesach.
