A few weeks ago I was by this family who served many different small salads/dips and they were truly amazing.
I don't remember all the things there but I remember some that I will list and if anyone has any recipes it would be greatly appreciated
Shredded carrots (sourish spicy)
Cooked carrots (Moroccan)
Beets salad
Spicy matbucha
Red cabbage (was sourish)
Green salad.(don't know what was inside exactly but many green leafy vegetables)
Green dip (bit spicy) that was eaten with challah
Kohlrabi salad
There was more but I don't recall at the moment...if anyone has anything else to add it would be appreciated..

Also I remember this eggplant slices salad with some sort of dressing on it topped with chopped parsley

Why don't you ask the family? A lot of these are prepared differently by different people.
