Can I make a deli roll if I just have turkey? We ran out of pastrami or corned beef will it still taste good

Brush the turkey with a layer of very tasty sauce before you roll it up. Something like this could be delish.
6 tbsp apricot preserves or duck sauce
1 tbsp teriyaki sauce or soy sauce
1 tsp mustard
