I'm having a lot of people for Shabbos one week, and trying to keep things as simple as possible. What can I easily make in large quantities (think 50 servings or so). Does not need to be fancy, just filling, VERY easy, not too expensive. I was thinking...

Rice
Corn salad (I can buy the big cans of corn for it)
Cabbage salad
Carrot kugel (using shredded carrots, so no cutting or peeling involved)

Open to other ideas...for sides, but also for mains, appetizers, really easy desserts...

Carrot muffins using pureed carrots.
Frozen stir fry veggies tossed with oil and spread over large pans to roast.
Mushroom rice baked in the oven.
Cole slaw.
Shredded carrot salad.

Miriam Pascal Cohen has a great salami rice recipe. Also great veggies like snowpeas with shallots.

Very fine 5 minute couscous

Desserts:
Baked apple
Or
Parve ice cream
And bowls of chips, popcorn, candies, grapes, pastries etc like a shobbos party

I have successfully made and frozen meatballs for a large group. You could also do something like chicken pot pie or shepherd's pie (with ground beef sauteed with vegetables covered in mashed potatoes) in a 9 x 13 inch pan. Stir fried chicken and vegetables over rice or beef and broccoli over rice freezes nicely.
