123 cookies.
So easy and quick

1 cup sugar
2 eggs
3 cups ground nuts (I like almonds)

Bake 10-15 minutes I think

You can add 2 Tb cocoa to make them chocolate cookies.

You can also add chocolate chips to make chocolate chip cookies.

We adapted this recipe to make mezonos cookies:
2 1/4 C brown sugar
2 bananas, mashed
4 eggs
4 egg yolks (so many recipes call for whites, we always have extras, you can just use an egg or 2 instead, if you don’t have yolks)
3 C nuts
3 C matza meal

Mix together (they can be mixed with a fork-no mixer needed), scoop onto cookie sheets. (Sprinkle with cinnamon & sugar). Bake as above, Just make sure you don’t over-bake them.

Lol! Nice recipe but it certainly isn't “adapted”. Its an entirely different one! Enjoy Smile

Renee Muller coconut biscuits - we love these, even those of us who aren't normally coconut fans! They are super easy.

2 cups potato starch
1 cup sugar
1 tbsp. vanilla sugar
1 cup ground almonds
3/4 cup ground coconut
2 eggs
1 cup oil

Mix dry ingredients together. Add eggs and oil and mix.

Roll into 3/4-inch balls and place on baking sheet about 1.5 inches apart.

Bake at 350 for 16-18 minutes until golden (I find they actually need less time than this so keep an eye on your first batch)

Mocha Muffins.

8 eggs
3 cups sugar
1 1⁄2 cups potato starch
1 cup cocoa
2 cups oil
2 T coffee, dissolved in drop of hot water

Mix all ingredients and pour into muffin pans (fill to top). Bake at 350° for 25 minutes. (24 pcs.)
I sprinkle some with chopped nuts.

Another favorite recipe is the Coffee Meringue Cake, a bit of a patchke but worth it imo.

Meringue Cake:
12 egg whites
1 1⁄2 cups sugar
3⁄4 lb. ground almonds or filberts, toasted slightly


Cream:
12 egg yolks
1 1⁄2 cups sugar
1 1⁄2 cups oil
3-4 T coffee, diluted in a drop of water

Beat egg whites on high speed, gradually adding sugar until stiff. Reduce speed
and add nuts, mixing gently. Pour into 2 lined 11 X 16 pans and bake at 325° for 50 min. For
cream, beat egg yolks and sugar well; add oil and coffee and place in a double boiler on a low
flame. Stir until mixture becomes thick, about 20 min. Immediately spread half of cream onto
one meringue. Cover with second meringue and spread rest of cream on top. Serve frozen.

Yes. She called them Nina’s Biscuits when it was posted years ago in the whisk magazine. They are my favorite to bake. So easy and it makes a lot . I double the recipe right away because it’s very in demand in my house. We are not huge coconut fans but the ground coconut adds to the texture and flavor but is very subtle too.

Yes same we also double immediately. And make another double batch for the second days.
