If you like mushrooms this is really good. https://smittenkitchen.com/201.....agna/

I would think you can use a different vegetable or no vegetable if you want but we love mushrooms so I never tried.

Make a creamy white sauce (bechamel) and put it between layers. You can do lasagna /sauce/Tuna..

Look for a white sauce recipe and use that, but it will be extremely rich.

I've seen recipes with pureed butternut squash used instead of tomato sauce.

No Mac and Cheese is totally different. A bechamel is a white sauce with whole milk, flour, butter. Its a thick white sauce its delicious. It does not have cheese.

Mac and Cheese uses that sauce with different cheeses added.

I remember looking for a white spinach lasagna recipe a few years ago and being surprised that I couldn't find one, it's so classic.

So I just made a bechamel and added spinach and voila!

My go to bechamel is:

Saute:
Small onion
1/4 cup butter

Add:
Scant 1/4 cup flour
1 teaspoon salt
pinch black pepper

Mix quickly then quickly add:
3/4 cup milk

When bubbling, turn off the flame and add in:
Lotsa cheese

It's a white (milk) sauce that is thickened with flour. I make many varieties like broccoli, mushroom, spinach, onion. Sometimes I do it with pieces and sometimes like with butternut you need to blend it.

I've subbed canned pumpkin for tomato sauce. I add in garlic and onion powder, or you could use fresh garlic and onion.

If you want a more traditional lasagna mouthfeel, sauce made with pureed pumpkin and thinned with a bit of heavy cream- seasoned with some garlic and salt, is delicious.
