did you get vivaldi white potatoes or vivaldi baking potatoes?

I know someone who sells delicious kugel from the stores and she's uses these. They sell well, and everyone loves them. Maybe ask around what other stores/people use who sell in the shops?

What's so bad about the kugels you're making? I've used most of those potatoes with my kugels and not had any issues. What were you using until now and what has changed?
I always prepare the batter-flour, eggs, oil, salt etc ready so that I pour the grated potatoes straight in, mix and put into my heated oven. I don't have them going grey and the taste is fine.
I would personally try a different recipe and see if you get the same results. Sometimes a different oven, or other ingredients can make a difference as well. Like if you switched what oil you use.

I make my kugel from the peeled and cubed potatoes sold in the fridge of KK and it’s the perfect color and taste every time.

Strictly English names.
Americans have other types.. gold, Yukon, russet ect…

I use the supermarket red potatoes. I think they are called desiree. But all red potatoes I have used give nice results.

I live in Europe and here potatoes are classified for what they are best for. Potatoes for baking, potatoes for salad, potatoes for soup, potatoes for frying. I usually use baking potatoes and my kugel comes out delicious. I say try the baking potatoes.

We have brauburn, golden delicious, pink lady, gala apples. Bramleys (they're the large cooking tart ones) I don't remember the rest. Do you have the same?

Idaho potatoes start turning in the food processor before you even get around to making kugel. I can manage it, but I hate when my kugel is greyish. Yukon are much more forgiving.
