Meatballs over spaghetti squash
Chopped meat/potato pinwheel
Shepherds pie
Fruity chicken nuggets

I can only post ideas since my Pesach stuff are still closed up.
Blintzes filled with either vegetables or chopped liver served with onion or vegetable sauce.
Baked apple with a nut crust/crunch
Sautéed liver on top of mashed potatoes
Pulled chicken or beef on top of salad or fill romaine leaves for a taco look
Parsnip purée or butternut squash purée on top mini kugellete top with a slice tongue or slice thin roast. You could also try with yapchik muffin size although I don’t think they hold up as nice.
Blintz pie slice with your choice of filling
Battered chicken nuggets on skewer on top of scoop mashed sweet potato or inside romaine leaf for more festive look.

I don’t really do recipes it’s more of an approach- make a mix for any chopped meat recipe- and lay it flat on a cookie sheet chill it in the fridge . Top with a layer of room temp mashed Potatoes roll and bake.
Shepherds pie is the same thing but flat and in layers
