Zucchini is on sale at the supermarket, so I bought a lot. Does anyone have a recipe for a zucchini salad (or a really, really good zucchini kugel - I don't like my recipes.)

No, I don't have it. (I usually buy my cookbooks on major sale or in Amazing Savings ) and S&S is awfully expensive.
But maybe you could give me the recipe?

first, next time you're in town BUY IT, it's a classic
it will be on sale in Teves (Kehot sale)
recipe:
3 lbs. zuc. peeled and sliced
1/2 cup chopped onions
1/2 cup bread crumbs
2 eggs
1/2 cup margarine (1 stick)
1 tsp. salt
1/2 tsp. pepper
1 Tbls. sugar
boil zuc. in salted water to cover until tender, about 15 min. Drain.
preheat oven to 350
mash zuc. and add all remaining ingredients except for half the marg. and mix well.
pour into greased 9 by 9 pan and dot with remaining marg.
bake for 1 hour, or until golden-brown
must be served hot
(marg. is so unhealthy, wonder if can replace with oil)

apple zukini salad:
cut up apples
cut up zukini
add chopped walnuts
pour italian dressing over all
serve
zukini soup (just got this recipe sunday)
zukini- cut in chunks
onions-diced
fresh dill
fresh basil
fresh parsley
fresh garlic
put all in pot, cover w/ water, when soft, blend all. add pepper
good hot or cold
she said that there are no amounts for each item so soup comes out a bit different each time. but even my kids ate it on shabbos!
if you want zukinifudge cake recipe, let me know and I'll see if I can find it.

Thanks for the recipe, Motek. Sounds good. I think I'll replace the half of the margarine that goes into the kugel with oil. Can't think why it wouldn't be possible.
Shanie - zucchini fudge cake sounds really interesting - a healthy cake? Is it good too? If so, then please give me the recipe!!

sarahd- I use oil, no margarine, skip the onions, matzah meal instead of breadcrumbs, and skip the sugar. also double the recipe for a nice sized 9 by 13 pan.
actually recently instead of baking it, I make it into latkes, just needs a bit more matzah meal for that.

by the way if you want a beautiful kugel, make the bottom layer kishke, and the top layer zucchini.

here's another recipe, I was actually thinking tonight as I was making it that I should post this recipe, then I thought I'll wait til s/o asks for a zucchini recipe.
So here it goes:
ZUCCHINI STIR FRY
4 zucchinis
1/4 cup slivered almonds
4 tsps olive oil
2 cloves of garlic, minced
2 tsps basil
salt and pepper
1/4 cup shredded parmesan cheese (optional)
saute the almonds on medium heat fot 3 minutes, set aside. cut up the zucchini into matchstick length pieces (like the size of baby carrots), saute the zucchini, garlic, basil, salt and pepper for 5 minutes. Sprinkle the almonds and cheese on top.
Deeeeelicious!!
