Help me plan a simple menu for 20 people

Please… I have no idea what to cook aside for chicken, meat and potato kugel
My own kids are picky as are some of the guests but I can’t serve the same things over and over again for 6 meals.
I know chicken soup for the night meals..
I’m really stuck

How about a Orange soup for a couple meals. (Maybe 2nd day YT.) then keep it light with Vegie salad with salted cheese. A nice fish meal and you can add potatoes if the kids want. Maybe for the kids you can prepare Pizza Matzo alongside this.

Meats, Meatballs, Shnitzel, (just a variety) served with cucumber salad, potato salad. or kugel.

Remember by Shabbat, not too many people will be ''Hungry''. Maybe serve a nice fruit soup, or fruit salad. Maybe day meal can be fish.

Basically, think spreads, salads, cooked veggies. What do you and your guests like in each of those categories? Maybe ask?

I also make my own Chrain. Can I do that already? Will it be sharp on pesach?

I make my own Gefilte fish but I don’t think I’ll have enough customers for any other type of fish.

Ok- I can do apple kugel.. half the people will probably want. I planned on making lots of cucumber salad.

How do you make butternut squash soup?
Sweet potato cubes? Roasted potatoes?

I would love to write it all out but I have a flight to catch soon.

The recipes you asked for are KLP all year round so perhaps check up a recipe on line.

It's totally ok for you to be repetitive as long as your family and guest are happy and satisfied.

Chrein can be frozen and lasts at least 2 weeks in the fridge so I would say go for it.

Most of my guests won’t appreciate that although those are things I enjoy very much.

Thanks for the tip on freezing Chrain. Been making it for close to 2 decades and never knew..
When you are settled can you tell me how you do the sweet potato cubes?
For myself I usually do slices with a drop of salt and garlic but I don’t think most people would go for that. Or maybe I can just cook the sweet potatoes with the chicken?

I find roast, Mashed potatoes, apple kugel, and cabbage salad is one satisfying and easy meal for a crowd.
Can any of the guests help cook? My sil doesn't have a pesach kitchen but she sets up a table and prepares lots of frozen breaded shnitzel that we fry fresh. Kid friendly.

Good idea…
I find mashed potatoes very tedious to make. How do you do it? Also some of my kids (teens) probably wouldn’t touch it. Is it worth it for those that will?

Any vegetable in a kugel is really good. Think sweet potato, butternut squash, squash. They freeze amazing so can be made in advance.
Potato blintzes and knishes freeze really well.
Sauteed vegetables.
Squash and tomatoes.
Vegetable soups.
Cream of chicken soup.

I'd probably do a 5lb bag for 20 people. I'd peel, cube and boil the potatoes erev Yom tov. Save some of the boiling water in a container. Then stick the potatoes in a 9x13 until the meal you want. (We also use some pieces for karpas). Before the meal I'd heat the potatoes in the oven and mash. Add salt, fat of your choice, fried onions if you want, and enough of the reserved water to make it creamy.
Can't tell you what to do if you have enough people that won't eat it though.

Sweet potatoes.
Cube, sprinkle with cinnamon and a hint of sugar or honey, a little oil and roast.

I make butternut squash the same way.

Zucchini in the spiralizer (kids love using the gadget) with jarred sauce -if you eat, and grated/shredded cheese.

Once you cook up a big pot of potatoes you can use it in different ways.
You can then slice it and layer it with sliced eggs and spices and bake.
You can make latkes from cooked potatoes
You can slice it and fry with spices
You can use it in shepherd's pie
You can use Mashed potatoes to hold together burgers

Baked apples are easy eaither plain or with different toppings like nuts/cinnamon/honey/sugar.
A variation of shnitzel
Coat it it with Shredded potato or sweet potato or potato kugel batter before frying or diced onions

Make a big pot of compote

Chicken veggie burgers
Chicken with Cubed potatoes and sweet potatoes in oven in one pan

Sliced potatoes and sweet potatoes sautéed with onions and spices

Grilled chicken
Grilled chicken salad
Browned minced meat
Broiled chicken bottoms

Sautéed zucchini with eggs

Grated veg soup
Cream of chicken zucchini soup
Butternut veg soup

Beet salad
Salad with avocado cubes
Tropical fruit salad with romaine lettuce

Sorbet made from fruits

Orange soup is very easy. Fill a large stockpot (8-10 quarts) with four cups of peeled and cubed butternut squash, 2 cups of peeled and cubed sweet potatoes, one bag of baby carrots or peeled and sliced carrots, one large onion diced, three cubes of frozen garlic, a tablespoon of brown sugar, a few shakes of cinnamon or nutmeg, a squirt of olive oil, and 3-4 tablespoons of soup powder. Fill with cold water to cover and boil on the stove for about 15 minutes and then reduce to medium light for about 45 minutes. after 45 minutes, check for tenderness. If vegetables are soft, use an immersion blender or a manual masher to blend. Stir thoroughly and taste for seasonings. You may need to add some salt and pepper or more spice and sugar if that's your preference. You could also add a few tablespoons of orange juice for a little citrus flavor. Cook for another 15 minutes and either serve or cool and refrigerate. I like to serve with KFP mandlen or crunchy noodles.

"orange" soap or any color soup
1. Sautee onions - this add great taste to any soup - for a big pot I'd do 4 onions
2. Add you main vegetable - let's say butternut - in slices or cubes and sautee wit the onions for 10-15 minutes
3. add water and other vegetables - I usually add zucchini, carrots, potato, sometimes sweet potato
4. cook and then blend

I do zucchini (my favorite) the same way just a little more onion and then I wouldn't add any orange vegetable
