Layered potatoes and eggs baked (for dairy with sourceeam for pareve with oil/spices.
Sliced round potatoes and sweet potatoes sautéed with onions
Roasted Cubed potatoes and sweet potatoes
Shepherds pie
French fries/chips/fried round slices
Cooked Mashed potatoes could be used to hold together stuff like burgers etc
Could be used as a layer in a veg muffin kugel

Syrian potato salad - boiled potatoes cut in big chunks, eggs cut in 1/4s, oil, lemon juice, salt, cumin and/or all spices

My mil makes for a meaty meal boiled eggs slices with squares of potatoes. Salt. Maybe onions, cooked in a pot. No spices.
