I put in my meats on 215 at 10 at night. DH shuts the oven for me before leaving at 6 in the morning.

Depends on the meat. But even a simple one - like a Deckel roast, that I just sprinkle with kosher salt, pepper, lots of garlic powder, and drizzle with oil - is delicious with this baking method. Really tenderizes it.
I do a chuck roast same baking method. Saute an onion, a little salt, 1/2 cup brown sugar, 1/2 cup tomato sauce, 1/2 cup water, and a dash of lemon juice. Taste the mixture to ensure you like the combo (you can add more salt or more brown sugar if you like). Pour it over your chuck roast, cover tightly, and bake as above.
So overnight, I'll do both of the above roasts in same oven, and I wake up to the house smelling like meat....
