Moroccan Carrot Salad
6 good sized carrots
1 tbsp paprika
1/2 tsp cumin
1/2 - 3/4 tsp salt
1/8 tsp pepper
1 tsp harissa (or 1/2 - 1 tsp hot paprika) or use 1/4 - 1/2 tsp hot chili flakes
3 tbsp olive oil
1 tbsp lemon juice
2 tbsp vinegar
1 tsp sugar
2 cloves minced garlic
chopped cilantro or parsley
peel and cut carrots, either 1/2 inch (crinkle cut is nicer) circles or 2 - 3 inch spears.
cook in salted water until al dente -- not soft. VERY IMPORTANT! or they are too mushy.
drain and add spices and liquid ingredients while carrots are warm.
let absorb and add cilantro or parsley. refrigerate.
Moroccan Beet Salad
3 large beets or 6 medium beets
4-6 tbsp olive oil
3-4 green onions, thinly sliced
juice of 1 or 2 lemons
1 1/2 - 2 tsp ground cumin (don't skip)
1/2 - 1 tsp sea salt
1/4 tsp ground black pepper, or to taste
1 tsp sugar
cilantro, chopped
Clean beets and leave unpeeled. Either put in foil individually with some olive oil and roast at 425 f until a skewer passes through easily or boil until done.
Let cool, peel and cut into spears or semi circles (use gloves or it stains your hands).
Mix all together and let marinate. Overnight is best.
Salade Cuite (Madbucha)
28 oz can diced tomatoes
5 cloves garlic, peeled and sliced
1 - 2 green peppers
6 tbsp olive oil
1 1/2 tsp salt
1/4 tsp black pepper
2 tsp sugar
1/4 tsp cumin
2 -3 tsp paprika (if you can, use the Moroccan type)
harissa paste or 2 or 3 jalapenos cut in strips (OPTIONAL)
cilantro or parsley, cilantro is preferable (cleaned, check and chopped -- approx 1/3 cup packed before chopping)
Roast green peppers, remove skins and seeds. Slice in strips.
In large fry pan with lid or dutch oven, put oil and garlic. Gently fry for 2 to 3 minutes. Do not let get colored.
Add remaining ingredients except cilantro and bring to boil. Turn heat to medium and cook covered for 10 to 15 minutes.
Place lid on halfway to let reduce and control splattering. Turn heat to medium low and cook until very reduced and thickened. Let cool and taste and adjust seasoning.

I don’t have enough strength/ stamina/ patience or time to do it all at once. I started last Wednesday and I make 2/3 things every day for fridge/freezer.

Chinese chicken with broccoli
1 cup flour, salt, black pepper, 1 bag broccoli frozen
Combine flour and spices. Roll chicken nuggets pieces in flour mixture. Heat little oil in frying pan & brown chicken pieves on both sides. Once browned pour contents of bag broccoli over chicken.
Ing for sauce:
1/4 cup soy sauce, 3/4 cup water, 2 frozen crushed garlic, 1 squeeze ketchup, 1T cornstarch, sprinkling of sugar
Combine dressing ing and pour over chicken & broccoli. Let cook on low flame for 20 minutes. Serve warm
For lc
I skip flour, cornstarch and do splenda
