I want to serve pulled beef the second night - Friday night. I'm only going to have a hot plate to warm things on. What would go well with it that can just be heated up on the hot plate?

I would have taco shells and room temperature rice. Hot pulled beef over room temperature rice warms up the rice enough to be yummy without drying it out.

Use taco chips/nachos and make a pulled beef platter. Add diced tomato, avocado and red onion on top of the pulled beef. Can also use jalapeno peppers if you like spice. Drizzle with nish nosh dressing and/or spicy mayo. Everyone loves it
