Picked up a bag in Trader Joe’s.
Now what do I make with it?

Cook like any other potato - theoretically they are healthier than white potatoes.

I use them in potato salad and roasted but mixed with white potatoes as the mixture of colors is attractive.

They are most similar in 'texture" to Yukon Gold

They brown immediately so they're not best for chopping and roasting although I've done that. And you can cook like regular potatoes but the texture and flavor (more sweet and chestnut) is diff

Slice them in half with peel on, put spices and roast face down at 350 for a long time until crispy.

Delicious steamed and mixed with ground beef and sautéed onions for patties

Add to soup and zuzh for a great creamy flavor

You think they would be good “fries” like French fries but in Betty Crocker?
Do kids go for the chestnutty flavor?

Taste is pretty similar. These don’t taste like a yam or sweet potato.

Chiefly they are decorative as they make a pretty potato salad and I have seen them roasted with other colored root vegetables.
