so I keep seeing that you shouldn't keep chicken in fridge for more then one to days- when do you start counting. like if I brought home chicken yesterday afternoon can I cook it tomorrow- does it matter when? or am I expected to freeze it? and if I wanted to cook it on friday would I really need to freeze and then defrost the chicken? I get neurotic about this kind of stuff...

You're fine. It's once you open it that it's important to use it within a few days.

You should see a date on it.

oh thats why the date is later, I was so confused. I thought maybe the fridges in the store are colder or something...

Maybe I'm neurotic but I like to cook chicken within two days of the date it was packaged in the store. If I would be cooking it at a later date I would freeze it as soon as I bought it and then defrost.

Not really. Why should it be OK longer than a few days just with a seal?
And they often give a date way too late

I use it within 3 days of the store shechting it
(Unless it was frozen)

I try to only keep it in the fridge for 24 hours. So if it's longer I'll freeze it.

so if I buy it at like 2:00 yesterday then as long as I make it by 2:00 tomorrow I'm ok?
for the person who does 24 hours so if you want to make it in 36 hours you freeze and then defrost- how does that work?
