Personally I use Yukon gold. They get nice and soft but not mushy or fall apart.

Am I the odd one out that I use Idaho almost always for everything? My kids don't like the Yukon ones. Every time I use them nobody wants it.

I use Idaho almost exclusively. Yukon are more expensive so I only buy them on sale, or for a yom tov.

I switched over to Yukon a few years ago. For everything. It has a mashed potato texture interior without falling apart. I find the Idaho more of a crumbly texture.
The only thing Idaho may be better for is latkes.

Hi.. this is so good to know, Bc the years I’ve been cooking I was using Idaho for cholent, roasted potatoes, potatoe kugel- until my friend taught me to switch to Yukon- haven’t turned back to Idaho since, and mashed potatoes.. now I just do potatoe kugel Yukon and everything else Idaho..
