Ive been making this for YT for years and it's a hit. I don't know if I'd consider it healthy, but its definitely more healthy and kugel-y than the standard recipes, because I think about 50% of it is actual carrot.
Thanks. Maybe next time, right now I'm turned off by having to cook the carrots first. My carrot cake recipes let you put them into a food processor raw. Sigh.
