I checked online and it seems like they’re only available on weekends! I’d love weekdays too.

Call them. Their website isn't usually accurate or up to date.

The hotel part is only open weekends, with food.
The cottages are open throughout the week, no food, only breakfast yes. If you stay for shabbos too you do get the food
