Can I just put egg, oil, crumbs, and spices into one Ziploc bag and coat the chicken that way? Will it work? I really don’t have patience right now to do the three stage dredge in flour-then egg-then crumbs-process.

It should. I've seen faigy Murray on Instagram doing it in a bowl.
I sometimes do just oil, crumbs and spices and it works. Not perfect tho.

I don't think it will work, but I am no expert. I usually bake shnitzel and not fry. When I fry, I do take the time to do the flour, egg, breadcrumb one by one in 3 separate plates. When I bake the shnitzel, I mix the egg with all the chicken at one time, so not doing one by one. Then I mix the spices and the breadcrumbs together and then I do one by one on a plate. I put a little oil on the bottom of the pan and then spray the top.
I personally only use the bags (shake and bake method) for when I do cornflake crumbs, mayonnaise and boned chicken.

Yes yes yes!!
I do this but with just oil, not eggs.
Then spray oil.
Comes out really good.
