For Chanukah I sometimes make this.... but this year I haven't seen any artichokes:
Artichoke, Fennel & Lemon Fritto Misto (Fried Mix)
2 medium artichokes
1 large fennel bulb, trimmed, cored, and thinly sliced
2 lemons, washed and very thinly sliced into rounds
2 C buttermilk or pareve milk with lemon juice
3 C all-purpose flour
coarse/kosher salt and freshly ground pepper
5 C canola or peanut oil for frying
Separate artichoke bottoms. Remove green skin with peeler. Thinly slice. In a medium bowl, stir together artichoke bottoms, fennel, lemons, and milk to coat evenly. Place flour in a separate bowl, and season with S&P; whisk to combine.
Pour oil into deep fryer. Set to 370 degrees. Drain veggies and lemons, discarding liquid. Working with one piece at a time, dredge vegetables and lemons in flour and place in hot oil. Cook 6-7 pieces at a time until golden brown, about 3 minutes. Drain on paper towels. Sprinkle with salt. Serve immediately.

It's good in a salad. Chop it pretty fine and use orange slices in the salad.
I also saute it (chopped) with garlic and tomatos and then cook chicken in the sauce. You can add black olives if your family likes them. Very tasty over rice or pasta.
