Green bean salad (blanched green beans, sauteed onions, basil vinaigrette, add toasted pecans right before serving)
Beet tomato salad (roasted beets - you can cube and roast the vacuum packed ones, grape tomatoes, scallions, balsalmic dressing, add candied nuts right before serving)
Carrot salad (we like a lemon olive oil dressing)

This is a spin on an Ina Garten recipe. Some people call it eggplant caviar.
Cut the following in chunks, coat with olive oil, salt, and pepper and roast on a sheet pan at 400 degrees for an hour:
medium eggplant (peeled and chunked), one red pepper (seeded and chunked), one yellow pepper (same), red onion (peeled and diced), 3 cloves of garlic (peeled and diced).
After roasting, transfer to a bowl and add in a shake of smoked paprika, two tablespoons of techina or mayo (or one of each), two tablespoons of fresh lemon juice, and puree with stick blender. Add in a handful of fresh parsley and give it a final zhoozh with the blender. Then, taste to correct seasonings if necessary. It may need additional salt and pepper. This lasts a few days in the fridge and tastes even better on second day. Serve cold with Challah or crackers.

Any assembling?
In advancd can slice palm & refrigerate.
(Better not to refrigerate raw tomatoes) on Shabbos take grape tomatoes & slice in half, then add premade or store bought salad dressing.

Quinoa with roasted beets and sweet potato. Drizzle of oil and salt. Easy assembly and stays nicely in fridge overnight. Can add nuts or craisins.

I also don't like to make lettuce salads because I want to do the least assembly on Shabbos possible. This includes any salads that can't sit in dressing overnight.
