I had to make it earlier in the day but won’t be doing dinner till 5:30/6. Can I leave it out for 2 1/2 -3 hours? If not what should I do?

You can leave it out or put it in the fridge and rewarm it before eating. Will be fresher like that

Not more than 2 hours.
Put in the fridge and reheat uncovered.

Yes, I was going to say that there is no way it would last that long on the counter in my house! Hide it in the fridge as soon as its cooked.
