I LOVE soup but aside from chicken soup I'm not very good at making it. I was caving and buying the grocery prepared one but it's expensive and im sure full of bullion.
I prefer a chunkier, hardy soup.
Please share your absolute best!

Saute onion, add 3-4 carrots diced (I slice most of the way down in two lines and then rounds), add a nice sized zucchini diced (same way), add a few stalks of celery sliced. Add any other vegetable you have (I like butternut squash for example, and some frozen garlic). Add one cup of green lentils or split peas. Can add barley as well (1/4 cup for 1 cup of legumes.) Add water to cover. For each 4 cups of water add 1 tsp salt, or to taste. For split peas, if they don't dissolve, add 1/2-1 tsp baking soda. Bring to boil. Lower flame and simmer for 1.5-2 hours. Enjoy.

This tomato soup! So good.

I tweaked it a bit::
It's super easy. Saute chopped onions in oil in a pot. Add fresh chopped tomatoes. As many as you like. They cook down a lot. Cook with the onions until they start breaking down. Add chopped garlic if you like. It'll start becoming liquid..sometimes I add water to make it more liquidy. Add salt, pepper. Can also add chicken soup mix to give it more flavor. Cook it until the tomatoes are very soft. Then just take a hand blender and blend. I add lots of cream at the end to make it really good. I'm talking almost a cupsworth to a very big pot. But enough of make the color change to a nice lighter orangey red.

Chestnut soup. Easiest and best soup ever.
1/2 C oil, 4 cloves garlic crushed, 1onion, 1parsnip, 1 turnip, med squash, 1 bag chestnut, 8-9 cups water, 1Tbs salt, 1/4 Tbs black pepper.

In a 4 qt pot heat oil. Add garlic, onions and CHOPPED vegetables. Cover and sautee about 15-20 min. Stirring occasionally. Add water, salt and pepper. Bring to a boil. Add chestnuts and let cook for at least an hour. Blend.

That sounds amazing. Thank you! I have a bag of chestnuts I bought a while ago just sitting around. I can't wait to try. What size bag of chestnuts does the recipe call for?

Not sure of size. Basic size bag most kosher supermarkets sell.

Basic vegetable soup
Brown onions in a bit of oil. Add chopped zuchini ,carrots, celery, turnip optional:potatoes (I like it without)
You can either make big pcs and blend to get creamy soup.
Or dice vegetables small and leave chunky.

Split pea soup(I like to add vegetables so it's lighter and blend once it's cooked!)or lentil soup(I add tomato sauce) are both delicious and super easy!

Basic blended vegetable soup. We make this almost every Shabbat. Some of our kids won't eat chicken soup but all of them eat this soup (BH BH).

*Lots of carrots
*2-3 zucchini
*one onion
*one or two sweet potatoes (depending on size)
*sometimes we put in a smallish crookneck pumpkin (or is it butternut squash? we call it delorit in Hebrew)
*sometimes some of what we call d'laat, which should be pumpkin but dunno (it comes cut into pieces, you buy a couple pieces) (it's more expensive than the other vegetables, so it's sort of a treat)
*one kohlrabi or fennel (one or the other) (optional) (if you use fennel add the green too)

Add water. Boil. Blend using an immersion blender until there are no more identifiable pieces. Serve hot/warm.

We used to add orange lentils (a plate or two) but we discovered more kids eat it happily if we leave the lentils out. (This is a texture issue, I think. Do what fits your family's needs.)

Not a chunky soup but so simple must share.

4 cups chicken broth (in a pinch 1 tsp consomme osem per cup water)
1 tbsp soy sauce
2 eggs (you can use just one yolk)

Heat broth and soy sauce until bubbling a lot.
Stir eggs in a cup and slowly add, stirring quickly with a fork to make ribbons.

1/2 cup? Why so much? Is that essential? I'm on a lower fat diet.

for a heartier flavor, use chicken soup instead of water. delicious!

and I use few bags of chestnuts. 3 or 5 oz bags. I leave few pieces of chestnuts out for garnish
