Honestly, nothing. might meals we wash and bentch, maybe have an appetizer. The kids eat around 5:6 pm , and my husband takes out whatever leftovers he wants from the fridge.

Still trying to figure out best way to steam the pastrami utilizing a plata- in case anybody has any ideas!

(I have thoughts of a steamer raised over a bubbling pot or slices sealed in a crockpot liner, bag submerged in a pot of boiling water. Not left long for either one. Chime in if you have opinions, please.)

If I eat heavy food/ a whole meal late at night, it keeps me up or a good few hours so the only one eating at yom tov night meals is my DH.
My kids (oldest is 10) are anyway starving by 5/6 so they eat then and are either sleeping or just coming for challah anyway to the seudah ). Hubbt is more than happy with doubling up / eating leftovers from the day meal and not making me cook special. Saves me a lot of time and money and less food going to waste. It’s not sad, it works for us and makes me enjoy yom tov much more when I don’t come in like a shmatte and have to cook for 4 different meals.

Second night I ways just reheat whatever we had the first night. By second night, only a few hours after finishing a big lunch, nobody is that hungry anyway. The mitzvah is to have a seuda. There's no requirement that it needs to be distinct from any of the other seudos.

If that’s what works for them and makes them happy, why is that sad? I would think it would be sad to make a whole beautiful, delicious meal that no one would eat.
