I bought quite a few bags of the butter gold potatoes on monday.
today I want to use them, they have all started sprouting.
are they safe to use?

Yes. Will be okay.
Did you remove from the bag and store in the fridge?

I heard storing in the fridge makes them go soggy?
they were quite wet when I got them. I opened the bags and stored it in a dark cupboard.

Best is to dry them thoroughly with a towel and then place in fridge. I find that When it's left in a dark cupboard, it sprouts much faster and doesn't stay as fresh. Wet potatoes will end up getting ruined fast and go mouldy
