2 practically 0 calories way to eat it is 1-Wash and eat raw or with light dressing. 2- Steam and put a little salt or your favorite spice.

Kosher by Design Entertains has a really good recipe for something called "popcorn" cauliflower. I don't have the cookbook so I usually get the recipe from my SIL. Maybe someone else can post it.

I make mashed cauliflower instead of potatoes. Steam until very soft, mash with potato masher or run through food processor (or something like that). Mix with a fat-free margarine (like smart beat) and season according to taste with salt, pepper, garlic powder or in a rush I just use McCormick Nature's Seasoning.

cauliflower popcorn from kosher by design entertains:
this is absolutely delicious. don't let it sit too long after it's baked it will get soggy.

2 heads cauliflower florets
1 tsp. salt
2 tsp. sugar
1/4 tsp. onion powder
1/4 tsp. garlic powder
1/2 tsp. paprika
1/4 tsp. turmeric
6 tblsp. olive oil
preheat oven to 450. line baking pan with parchment paper. combine oil and spices in a bowl, add cauliflower, toss to coat. place single layer on baking sheet. bake uncovered for 35 min. toss once during baking.

I double the recipe. 1/2 for me and 1/2 for the rest of the family

I do the same idea, just with salt and minced garlic. A great hit!

what do you mean by this? I was going to make it this shabbos. so it obviously will sit for a while until it's served. I know my mil makes it for shabbos and their family loves it!

613, I've made this for Shabbos so it was sitting in the fridge. It is still good, but it looses that crisp, fresh popcorn effect. It is still good and just tastes like small pieces of marinated, cooked cauliflower.

when you make the cauliflower POPCORN for shabbos and you make it ahead of time. do you leave it in the oven until you serve it friday night? and do you leave the oven on warm? or do you just leave it out uncovered at room temp?
