New ways to serve chicken?

Looking for new ways to serve chicken for Shabbos, on the bone, specifically. Not cutlets as they're very expensive where I live.

I usually bake it with some kind of sauce or basic spices/herbs like and serve with either rice or potatoes but I'm getting so bored of this.

Roast chicken with grapefruit, honey, and thyme - different flavor profile than the typical spices and comes out really good

Honey coriander Polynesian chicken - randomly found this in a Disney World cookbook and it's my husband's absolute favorite. We mostly make wings with it like the recipe says but I'm sure you could do drumsticks or thighs too.

I do mayo mixed with spices over the chicken then coated with corn flakes crumbs. bake on 400 for 1.5 hours covered then another half hour uncovered. I use montreal chicken seasoning but any spices can work. spiced mayo adds flavor and crumbs become nice and crispy

Instead of looking for new ways, I'd just find a new spice blend that looks interesting to you. I mean, it's hard to beat a good baked chicken.

Southern style chicken. Separate the thighs and drumsticks. Remove skin. Brush with well seasoned mayo. Dip in cornflake crumbs.
Bake uncovered until golden.

Whole roasted chicken rubbed all over with thick paste of garlic, oil, lemon, herbs. Baked uncovered.

I normally use:

Paprika, garlic powder, onion powder, s&p

Thyme/rosemary, garlic powder, s&p

Hawaij/shawarma spice, garlic, s&p

What other combinations?
