For the one dairy meal (probably first day)
Cheese stuffed mushrooms
Side of salmon
Pepper and feta salad
Either eggplant Parmesan or cauliflower with sauce and cheese bake
Iced coffee

One meat meal (probably second night)
Vegetable soup
London Broil salad
Peach crumble with vanilla ice cream

Not sure about the other 2 meals yet.

8 oz. cream cheese block, softened
1 cup creamy peanut butter
1/2 cup confectioners sugar
1 tsp pure vanilla extract
melted chocolate, for dipping
chopped peanuts, for garnish

In a bowl of an electric stand mixer or a hand mixer, beat the cream cheese, peanut butter, sugar and vanilla until smooth.
Cover and chill until firm, about 6 hours or overnight. Once firm, scoop out and roll into 1" balls.
Quickly dip into melted chocolate and chopped peanuts. Store, wrapped, in fridge until ready to serve.

So don’t make dairy… many people don’t have dairy meals on Shavuos. And for the vegetarian you do whatever they regularly eat on Shabbos or yom tov.
