Use water instead of milk

will I ruin the recipe if I use water instead of milk in a rugelach recipe that calls for 1/4 cup water
and a 1/4 cup milk (and extra water for yeast to dissolve)?

I would sooner use pareve milk, then apple juice, rather than water.

Some recipes call for orange juice but it's not the best digestion wise to consume flour and acid together. So whenever a recipe calls for orange juice I replace it with apple juice. Plus a lot of breads have apple juice in it. It probably adds to the flavor more than water does. And rugelach is a dough type of recipe which is similar to bread.

rugelach recipes usually have water no?

that why I thought just replace the milk with more water...

It already calls for water though.

It would probably be fine to just replace it with water but I just think pareve milk (or apple juice) would be better.
