M family holds all YT meals should be fleishig, and just have something dairy on the first day, a while before the main seuda.

We have a huge milchig kiddush the first day. Take a walk, nap, etc. and then wash for a fleishig meal at which I serve a tiny bit of fish and then a steak salad since nobody can eat more than that. The second night meal also suffers from everyone still being full, and I plan my menu accordingly.

Chassidish wait after milchigs 30 minutes based on the Zohar. Other people do not necessarily wait after milchigs. That's probably why you mever heard of such a thing.

Milchig the first night. Big dairy kiddush with the neighbors while the men are sleeping first day, then all fleishig meals.

My husband only eats ice cream. So pareve meal and then ice cream dessert. Day meals are fleishig because he feels strongly that yom tov should have meat. I am not a huge fan of dairy so I am fine with it.

Usually we do one first day and then have fleishigs closer to supper time. That's out minhag that Yom tov meals are fleishig. Essentially we make a very elaborate kiddish and then have a late fleishig sedua that's one course.

This year we are going to my mother the first day who serves pareve so to make my family happy, were going to do the whole Milchig "kiddush" and fleishig meal on the second day.
