I’m a huge fan of sheet pan chicken roasted with vegetables and herbs with a pan of rice cooked in the oven at 400 for 1 hour and fifteen minutes. You may need to remove the chicken at the one hour mark. Put well cleaned apples in their skins to bake with cinnamon and sugar for 30 minutes on lower shelf in one inch of water while the rest roasts. Voila and you have a complete and fragrant meal.

I’m a huge fan of soup dinners. Sauté any veggies can even be frozen or prediced ones. Cook with water and add chicken. Add noodles, rice, barley, potatoes, beans etc. so many variations. Do it with mushrooms, or broccoli, or shredded carrots or a mix of veggies. o
Serve it in a wide bowl with a toasted baguette on the side.
Easy. Fast. Mess free. Healthy.

In the summer we love sandwich dinners:
Hamburger or
Sloppy Joe or
Minute steak or
Grilled chicken/schwarma/schnitzel
Rolls/pitas/baguette
Sliced tomatoes, lettuce, pickles, onion etc
Sauces and condiments
Everyone puts what they they like in their rolls. Kitchen doesn't get too hot. Not too many dishes to wash. What's not to love?

Boneless skinless chicken (baby chicken) seasoned in one bowl with potato wedges and roasted on a cookie sheet for 35 min. Frozen broccoli on a separate cookie sheet on the other rack at the same time.
Burgers laid out on a cookie sheet and baked at 400 for 20 minutes. Serve with bought buns, bagged lettuce, sliced tomato and red onion and garlic mayo.
Baby potatoes for 20 minutes on a cookie sheet (halfway done) then add salmon and green beans to the potatoes and roast an additional 18 minutes.
1 cup rice, 2 cups boiling water, 1 tsp salt sealed tight and placed into the oven at 425. Meanwhile, place thin sliced chicken cutlets in a ziploc bay with cornflake crumbs, oil, paprika, garlic, salt. Seal and shake until coated. Place on a greased cookie sheet and bake uncovered for 18 minutes, while rice continues cooking.
Serve with bagged lettuce, washed grape tomatoes, and ready dressing.
