Also looking for lodging ideas to accommodate large 8+ family (connecting rooms,.etc.)

Honestly, it depends on what your family enjoys and how long you're planning to go. The American side is more nature and the Canadian side is more touristy. There are some nice trails and bike/scooter paths around the falls on the American side and then following the lake. I'd suggest looking into things in upstate NY that are close by, such as the naval ships where you can go onto the ships and into submarines, there's a children's museum nearby also. I've looked into it and there are other things to do as well but I can't remember offhand. You can also drive to Rochester and do that area.

We did Niagra this summer. The American side is good if you are just looking for a "quick trip". If you are looking for a multiple-day vacation and can spend $$$ then the Canadian side has all kinds of attractions, museums, kosher food, multiple hotels etc. We were mostly just "passing through" and were happy with the quick stop, walk through the Niagra park, go on the Maid of the Mist and get back in the car and go on our way.

Thanks for advice. We don't all.yave passports so Canadian side isn't an option..

Children under 16 do not need passports to cross into Canada, just birth certificates .

We went to the American side and had a great time. We did Maid of the Mist and Journey behind the falls (or whatever it's called on the american side). There's fireworks at night over the falls that is clear to both sides. The view of the falls from the American side is completely magnificent. There's a trolly you can take around and we enjoyed that very much.
We stayed at the Radisson Hotel Niagara Falls - Grand Island. It's about a 15 min drive from the falls. It's along a river (Grand River I believe) and the views are beautiful. We were 6 people at that point and got a 2 room suite with 3 sofas that can open up into beds. I think there were also connecting rooms for even larger families

Cave of the Winds was probably our favorite part, between the different things we did on the American and Canadian side.

Same. We also only did the American side and my kids could not get enough of the Cave of the Winds, we actually went back to the start and went through it all again

There's an amazing museum in Rochester, could be a full day experience there, The Strong: National Museum of Play.

I would go to just the American side.
The Canadian side is just prettier and the boat goes closer and there’s the sky wheel but the American side is amazing
