Does anybody have experience with Kinona or knows a good recipe. I know it is cooked like rice, but it has this nice taste of soap.... so I would like to have a good recipe for a dish with it, since it is full of proteins.

I also have a bag sitting in my cabinet of quinoa. I hope someone has a good recipe. I remember my mother used to do so much with it. Sometimes we eat it as a breakfast thing or dessert or as a sidedish.

Where can you buy quinoa? In a regular grocery store or do you have to get it at Whole Foods or something?

Okay, I'll just put 'em all in one by one:
Quinoa with shredded vegetables:
1/2 C quinoa
1 T margarine
1/2 C chopped onion
1C vegetable broth or water
3/4 C each shredded carrots, rutabaga, zucchini
salt to taste
1. rinse quinoa in 5 changes of water or in colander under running water.
2. in a saucepan, melt margarine over medium-high heat. Cook onions about 2 minutes; add quinoa, cook about 1 minute til quinoa starts popping a little. Add the broth and bring it all to a boil.
3. add the rest of the ingredients, reduce heat and simmer covered about 15 minutes til the liquid is absorbed.

Quinoa with mixed vegetables
1/2 C quinoa
1 T vegetable oil
1 C chopped mushrooms
3/4 C chopped carrots
1/2 C each chopped onions, green pepper, celery
3/4 C vegetable broth
1/2 C corn kernels (fresh, canned, or frozen)
1/8 tsp pepper
1. rinse quinoa in a colander or in multiple changes of water.
2. in a saucepan, heat the oil over medium-high heat. Add all the vegetables except the corn. Cook about 4 minutes til veggies are softened and any liquid evaporates.
3. add the broth and bring to a boil. Stir in the quinoa, reboil, and then cover and simmer 15 minutes.
4. stir in corn, simmer 5 more minutes, remove from heat and stir in pepper. Let stand a few minutes before serving.

Quinoa Italiano
1 C quinoa
2 tsp olive oil
1/2 C chopped onions
1 C marinara sauce, divided
1 C water
1/2 tsp dried oregano
salt and pepper to taste
1. rinse quinoa in multiple changes of water or in a colander.
2. heat oil. Add onions and cook about 2 minutes til softened.
3. Add 3/4 C of the sauce and all the water; bring to a boil. Stir in quinoa and oregano, return to a boil, cover and simmer 20 minutes over low heat.
4. remove from heat, stir in remaining sauce, salt and pepper. let stand a few minutes before serving.

Mandarin quinoa salad
2 C cooked quinoa
1 11 oz can mandarin orange segments, drained, 1 T syrup reserved
1/2 C chopped salted peanuts
1/4 C sliced scallions (white and green parts)
1 T vegetable oil
1 T rice wine vinegar
1 tsp sesame oil
1/8 tsp ground giner
1/8 tsp salt
1/8 tsp ground red cayenne pepper
In a large bowl, toss together the quinoa, orange segments, peanuts, and scallions. In a small bowl, stir together the remaining ingredients. Pour the dressing over the salad and toss to combine.

Stewed garbanzo beans with zuc-quinoa
For the beans:
2 tsp olive oil
3/4 C chopped onions
3/4 C chopped green pepper
1 15 oz (more or less) can whole peeled tomatoes
2 T tomato paste
1 1/2 C cooked chickpeas (or canned)
For the zuc-quinoa:
3/4 C quinoa
2 tsp vegetable oil
1/2 C chopped red onions
1 1/2 C broth or water
1/2 tsp dried oregano
2 C sliced zucchini
salt to taste.
For the beans, heat the olive oil in a pan over medium heat. Add onions and bell peppers, cook about 3 minutes til softened. Stir in the canned tomatoes with their juice, mashing a little in the pan witha spoon. Add tomato paste and chickpeas, boil, reduce heat and simmer 20 minutes.
While the beans are cooking, rinse the quinoa in a colander or in changes of water. Then heat the vegetable oil in a pan, cook the red onions about 2 minutes til softened. Add broth and oregano, bring to a boil and stir in the quinoa. Return to a boil, reduce heat and simmer covered 10 minutes. Add the zucchini and salt, cook covered 10 minutes more.
Note: you can substitute kidney beans for the garbanzos if you prefer. Also, it all goes well served with spaghetti squash.

Quinoa will taste like soap if you don't rinse it well, because it has a natural pesticide

Quinoa (pronounced kin-WAH) can be found in healthfood stores. It has a wonderfl flavor (rinse it first) and while I'm not sure if it needs a Hechsher per se, it has been classified as Kosher for Pesach, and it's NOT Kitniyot!
I make tabouli with it, using the quinoa instead of bulgur, and I've made it with sauteed mushrooms and onions.
We're very happy with it....it's also gluten free, btw.
