Is there such a thing that I can make in advance? Like yitz pancake mix

Yes definitely.
We have a pancake mix I make and freeze. It's not the same taste as Yitz though (we like it less sweet, thicker.)
1 1/2 cups flour
2 tsp baking powder
1/4 sugar
1/2 tsp salt
1 egg
3 T oil
1 cup milk or pareve milk
Combine all ingredients. If using right away, let sit a few minutes before making pancakes.
BTW sometimes I just make a bunch of pancakes and freeze them ready. DD takes them out for breakfast and microwaves to heat.
But you can freeze the mix. Defrost overnight in fridge. Make a bunch at a time in containers.
