Not sure if this is what you’re looking for,

Potato Kugel can be frozen if wrapped well. Defrost in the fridge overnight. Reheat.

Cakes and cookies can also be made in advance. Wrap well to prevent freezer burnt. I do foil and then a large ziplock bag.

I was due one of my children during Tishrei YT. I baked loads in advance. I planned to use for sholom zochur and bris or kiddush. I had a boy and had all the cake I needed. My SIL was visiting from seminary so she joined me in the kitchen.
We baked kokosh cake, chocolate cake, cinnamon crumb cake, chocolate chip cookies… there’s so much that can be baked and frozen. Some things should be cut to make it easier to serve for dessert or mezonos for the men in the morning.

Ideas for mezonos
Kokosh cake, brownie cake, chocolate cake, cinnamon crumb cake, vanilla or marble bundt with chocolate frosting, chocolate chip cookies, crinkle/zebra cookies, muffins or cupcakes (chocolate, vanilla or marble), pareve cheese cake, ice cream pie…

What do you mean by healthy sides?

Veggies and salads don't generally freeze well but there is no reason for you to make something fancy as you can cook veggies simply and they will be very good and healthy. Many markets sell various prepped veggies so you just need to steam, saute or roast depending on what you want to do.

Use bagged salads as those are healthy depending on the dressing you use.

Rice freezes well. You can do brown rice with mushrooms.

For vegetable sides I just put frozen vegetables in the oven on yom tov
Broccoli + salt pepper garlic
Cauliflower + salt pepper zatar
Green beans + frozen onion cubes, garlic cubes, soy sauce honey

Can also buy mixed vegetables. Or sliced

It’s easy and healthy and requires no advance prep

Baked chinese veggies:
Peal and cut strips of zucchini, carrot, and different colored peppers.
Chop onions and mushrooms.
Finely mince or crush garlic.
Mix with oil, sugar, salt, soya sauce, and pepper to taste.
Bake until "al dente" (mostly soft, but not completely).
Freeze.
