mom my makes a delicious and simple french roast

-make a few holes in meat
-add soy sauce
-lots of garlic power
marinate iovernight - this works best if you can wrap (with liquid in tin foil)
- bake to desired "rareness" in tin foil - my mom usually makes it well done
it is really delicious for being so simple

french roast can get very dry in the oven so you want to sear the meat first on the stove top. Fry onions and garlic then spice the meat on both sides and fry it in the onions till brown on both sides. Then transfer the meat and everything else from the pan into a seperate baking dish and bake until the tenderness you like. remember it shrinks.

I just posted this in another thread last night- maybe it will help? Note the tip at the bottom.

It's really simple to make and tastes absolutely fabulous!

Cranberry Minute Steak
(Dining In, pg. 156)

1 c. whole berry cranberry sauce
2 T. onion soup mix
1 c. water
6 minute steaks

Combine cranberry sauce, onion soup mix and water. Pour mixture over steaks in 9x13 pan. Cover tightly and bake at 350 for 1 hour.

Tip: To use this recipe for a whole roast, use a 3-5 lb roast, (French roast works very well!) and double sauce recipe. Bake in large Dutch oven for 2 1/2- 3 hours.

At close to an hour I opened and peeked into the closed tin, and it was so full of liquid, it didnt look right. I strained the liquid and continued baking it and it was ok.

One cup of water was WAY too much, in my case. It looked like a foil tin full of soup. I wonder what it would have looked and tasted like with no water added.

Can french roast be done on stovetop or must be baked. If it can be done on stovetop, how would I adjust the above recipes?
