I have a bunch of these red handled knives either from kosher cook company or Victorinox that I love but they do get dull over time. In the past I simply buy new ones since they are very cheap. But now I have around ten of them and I'd love to sharpen them. Curious - do you sharpen these knives? or just buy new ones? If you sharpen please advise how - which tool and link tysm.

As long as it's still in good shape, we sharpen.
We have a Chef's Choice. On sale it's about $80
