I was like you but no health issues bh until I faced reality that I must eat less to lose weight. I've always eaten very healthy but too much healthy food will not allow weight loss. That together with a strict 6-8 hour eating window (no coffee etc.) allowed me to lose nicely slow & steady bh.

Almost no sugar
Almost no bread
Lots of protein
Healthy fats but in moderation.

I would start Weight Lifting with body weight only as a beginner or start pretty light, just the barbell with no weights attached.

I incorporated Kettelbells and dumbells first and then added heavier weights and a barbell and leg press.

I do a combination of squats, lunges, deadlifts etc. depending on day.

Deadlifts are incredible. best workout for the buck imho. Works legs, back, and abs.

Form is most important is you don't want to get injured. I would hire a trainer, or do it the cheap way and watch a lot of YouTube videos.

I saw results fairly quickly, maybe a couple of months.

However, we are all built differently, I tend to lose weight very quickly waist up, and this is where I tightened up as well, went from a large to a size small very, very quickly.

Below the waist not so much, but did drop a size or two. I have very muscular legs and I always gain muscles there first. BH for skirts!

I only got new rx a couple of weeks ago so too soon to expect results.

You need an endocrinologist or a functional medicine practitioner. Specify location & perhaps you'll get names.

I will second the Whole Foods plant based (WFPB) lifestyle.
After doing:
Weight watchers
Fit for life
Diet meal deliveries
Overeaters anonymous
Intermittent fasting
surgery
Weight loss injections
Exercise (of course)
But….. I was back to square one.
Then I discovered WFPB living. What a godsend!
I don’t feel like I’m on a diet. From end of August til now
Dropped substantial amount of weight! That’s Over yomtov!!!
With 22 carb meals!
Feel zero deprivation!

High intensity workouts/exercise twice a week aerobic or hiit or sports (makes it more fun) or walking up hills fast (or else doubling the amount of time you spend walking up inclines) and then build your muscle mass by eating protein and building muscle (muscle burns fat so focus on the biggest muscles which are thighs and hamstrings)
Only with your doctors consent (my father passed away from starting new exercise regime that was too intense for his heart-pls be careful)

Wow you've been through a lot. You should read Body & Soul - that was my journey comparable to yours but it also has a Torah hashkafa and includes other aspects of health in addition to food.

Can you give us ideas of what you eat? This sounds doable aside from the 6-8 hour eating window.

I do similar but do drink black coffee during the "fasting" hours, keeps me satisfied.

I know you said no medication, but my daughter is starting metformin now. Her dermatologist said it's a very safe medication, there are even studies suggesting people on it live longer. Her endocrinologist said the side effect is diarrhea if she eats too many carbs. What do I not know?

How do you not feel like you're on a diet? You can't eat sugar or oil. Sounds like a diet to me.
A diet for me is an eating plan that I can't use anywhere anytime with zero prep.
I've done everything you mentioned and I'm done with it. Nothing works long term and I'm no longer willing to live my life revolving around making sure I have my foods. I want to be able to go to Simchas, shabbos meals, restaurants, work meetings, and be able to apply my eating plan there.

I would define "diet" differently. To me, a diet is a temporary change in eating in order to achieve a weight goal.

But if I know that XYZ food is harmful to me in some way, and I decide never to eat that food again, that's not a diet, that's a "live long and strong" eating plan. For instance, some people decide to stop drinking alcohol. That means that when they go to a kiddush or simchah and alcohol is served, they may have none, or allow themselves a certain amount and no more. I personally eat almost no grains on weekdays and no added sugar. I will absolutely not eat pastries and desserts that they serve at simchas. I enjoy myself, don't go hungry, and love the way I feel when I'm not putting that stuff into my body. To me that's not a diet, it's a permanent behavioral choice because I know that that stuff does not nourish my body the way that I want to.

Here's what I learned from the book Body & Soul: treat your precious body the way you'd treat a fancy car - would you put anything but the highest quality fuel into it? Why would you do that to your precious body which is far more precious than any car ever built or that will ever be built? It's about living up to the human greatness that Hashem gave us the potential to be.

It's a pet peeve of mine that people dont know or have the education that vegetables are carbohydrates, even celery, even lettuce. Vegetable is not a macronutriant and if all you eat all day is vegetables all you ate that day was mainly carbs with some amounts of fats and protein because yes vegetables also contain fat and protein but they are mainly carbs.

how big was the sweet potato? 1 cup=41 carbs
2 tablespoons oats are about 7 grams
1 cup berries-15 grams

Thats about 63 carbs (depending on the size of the sweet potato).
And depending on what other veggies your eating, that adds to the carb load too.

If the protein is plant based, they will likely have a decent amount of carbs too-like quinoa, beans, legumes...

Came here to say the same thing. I have been following this life style for about 5 years. If I eat nuts and dates, my weight moves up a notch so when I eliminate those indulgences I can eat enormous bowls of salads, sweet potatoes, brown rice and chickpeas and still maintain a healthy slender body.

Curious what body type this works well for.

Also wondering why people still think weight loss is simply calories in vs calories out, which it's SO clearly not, as your post proves (among many other proofs).

I am a volume eater. I am not happy until I eat enough to stretch my tummy. I eat no oils of any kind. I do not eat any animal products, no meat no milk no eggs. If a product contains any oil in its ingredients, I do not eat it. I can eat every potato, every bean, all kinds of rice , all fresh fruit or frozen fruit...all vegetables. I eat more volume than any other member of my family.
I have maintained a slender body this way. I eat fruit when others snack on crackers or cakes. On shabbes I eat one slice of pretzel challah ( no eggs ) or I'll have whole wheat matzah.

Haven't read through all the posts but I think one thing is by seeing the differences of everyone's responses. Different foods impact people differently but for me I don't think it's one way for everyone but rather you need to see which foods work for you and which don't. Looking at some of the ideas here that some are saying keep them at a healthy weight would make me gain but what works for me may not work for you.

I would really suggest going to a more holistic doctor or nutritionist that will help you see what is right for you.

I don't recommend this diet, it can be very dangerous in the long run. You need complete protein & healthy fats.

There was an influencer on such a diet recently who collapsed & died suddenly from malnutrition after eating like this for a long time.
