What can I do to keep her from pulling them off the moment they're on her feet?

It's getting cold outside and I can't just have her go around without socks.

You can buy soft booties with an elastic or Velcro closure that are usually harder to take off than regular socks

I like the childrens place Triple fold socks. They’re a lot harder for a baby to pull off
