I once made an easy breakfast muffin. Was basically rolled oats banana applesauce maybe some flour, maple syrup etc . They were a little dense but good. Better when warmed up. Kind of like a baked oatmeal.
I can’t find the recipe. Does anyone have a similar sounding recipe ?

I came across this recently, but have not tried it yet.
Healthy Cinnamon Oat muffins @saladsnsweets
2 eggs
2 tbsp avocado oil
1/2 c unsweetened applesauce
1/2 c maple syrup
2 tsp vanilla extract
1 1/4 c oat flour
1 c almond flour
1 tsp baking soda
1/2 tsp cinnamon
pinch salt
Optional add ins- 1 c blueberries or 1/4 c mini chocolate chips
Topping
1/4 c quick oats
1 tbsp avocado oil
1 tsp maple syrup
In a bowl using a whisk, mix: eggs oil, applesauce, maple syrup and vanilla. Add in oat and almond flour, baking soda and salt. Mix until the batter is smooth ( If you're adding blueberries or chocolate chips, fold them in the batter). Scoop into paper lined muffin tin. Makes 11-12 muffins. Bake at 350 for about 18 mins.

Thanks. Don’t want to use oat flour.
