I'm making meat pizza and I always shred whatever leftover meat/chicken from the soup etc on it
I mix with bbq sauce and nobody knows the difference

I've never figured out how to add leftover shnitzel to it.
Anyone know if there is a way to shred shnitzel?

You can shred it in the food processor.
