I'm looking for a stuffed cabbage recipe that I can use shredded cabbage for (sort of like unstuffed cabbage w/ meatballs). Anyone?

my grandmother;s recipe (modified) -

- mix ground meat with cooked rice and a little tomato sauce, pepper, onoin and garlic
- make small'ish meatballs (ping-pong ball sized or smaller)
- broil meatballs for 8-10 minutes turning once to brown evenly
- in a large pot saute lots of onions, 2-3 cloves minced garlic, oregano and parsley until onions begin to get translucent.
- Add cabbage and saute until just beginning to wilt
- add meatballs and 1 c. raisins (and any leftover rice if you want)
- pour in 24-32 oz. tomato sauce OR juice (I prefer sauce as it is thicker), 1/3 c. white wine, 2 Tbsp. sugar, 1 tsp vinegar and s+p to taste
- let simmer at least 2 hours on very low flame
- taste and adjust spices as necessary
- freezes great!

I dont know where we got this recipe but we make it almost every yomtov! basically layer ground meat and shredded cabbage, and a mixture of cranberry sauce and tomato sauce a few times. top layer should be cabbage and then sauce over the top. cover and bake for a loooong time. I can find out the exacts if you're interested.

I cook my stuffed cabbage in marinara sauce from the store, add water to make it ‘more’. You can simply drop in the meat mixture as balls, instead of stuffing cabbage leaves. You can add a package of shredded cabbage to the sauce too.

Do you have your favorite meatball mixture yet? Just use that and drop it into boiling (but lower the flame when it bubbles) sauce. Use this ratio: 1 can sauce + 2 cans water.

Unstuffed Cabbage- Kosher By design

(word for word - sorry for the typos)

3 lbs ground meat
2 eggs lightly beaten
1/4 c. water
3/4 uncooked long grain white rice
1 onion finely chopped
salt
black pepper
garlic powder
1 tbsp veg oil
1 head green cabbage shredded
1 1/2 tbsp kosher salt
1 1/2 c. tomato juice
4 8 oz cans tomato sauce
1/2 c brown sugar
1 1/2 c sugar
3 lemons
1/2 c raisins

In a large mixing bowl combine the ground beef, eggs, water, rice, and onion. Season with salt, pepper and garlic powder. Gently mix by hand. Set aside

Heat the oil in a large pot over medium heat. Add the cabbage and teh kosher salt. Simmer for 10 min. Add teh tomato juice, tomato sauce, brown sugar, sugar, juice from the lemmons and the raisins.

Gently form meatballs out of the meat mixture. do not handle too much or th emeat will toughen. Add to cabbage mixture.

Lower the heat to medium-low and simmer covered for 1 hour.

I have never made it so I can't tell you if it's good. I'm planning to make it for yom tov so I hope it is Smile
