I checked it during the week the temperature is 204 when I leave it on warm. When I leave it on low the temperature is much higher.

I leave the crockpot on low all the time.
For example, yesterday I made tzvibel fleish in the crockpot at around 7am and took it out around 7pm. It was on low not warm. Chicken was delicious.
What do you want to do with your crockpot?

Food can safely cook on 132 degrees so it should be fine but I might vary my answer on how to cook it depending on what you're making.

Anything above 150 degrees is considered safe to go for extended time.

If you're positive it holds above 130ish the whole time, then it will be fine. But you can also use low, nothing wrong with a higher temperature.

A crockpot should not boil hard on low setting

Something may be off with the temps

I changed the settings to low and it basically the same temperature as was in low. 205 degrees and it’s simmering I’m pretty sure when I put the chulent on low it would as boiling harder. I wonder if it’s only broth it doesn’t boil as hard as if it’s chulent with potatoes and barley and meat.

There is no recipe.
You cut onions either into small squares or larger slices and saute with crushed garlic optional in oil with some salt. You add the chicken with water and let it cook in a pot for around 2 hours. For the crockpot it's all the same, but you don't need to saute the onions first and you can also put some onions on top of the chicken and let it cook for 8+ hours. You can add some cubed potatoes optional too if you want a more complete dish.

I don't know. It isn't usually made with potatoes. I just said that optional. It's the most standard chicken around here. Small chopped onions and optional crushed garlic sauted until you add chicken bottoms with water and cook for a few hours. The onions end up making a nice onion sauce. Sometimes if I have more sauce than I need, I just freeze the sauce and use it one something like a chicken roll.

I make chicken legs in the oven and put onions and garlic on the bottom of the pan. Isn’t it the same? I don’t put water though?
