Somebody make me stop, Im convinced its low carb blah blah because all I did was slice them into fries and pop them in the oven (some oil spray). I cant stop eating, they âre heavenly.
Bake on 500 degrees for about 30 minutes.

Don't go overboard but you are right, they are pretty healthy. Rather eat too many of those than too many real fried fries or some chocooooooolate or dooooooooooonuts. YUMMMMMMMMMMMM!

Sooo funny you posted this! I just made some yesterday because I had an extra peeled sweet potato (made curry sweet potato latkes - yum!!!) and DH and I LOVED them. I was so excited, I was like, "LOOK! They look just like french fries! But their healthy!" DH won't stop asking me, "Are you sure sweet potatoes are healthy?"

turnips? that's new.
I like this so much, I think I will invest in something to cut these into fries. any suggestion? my wrist just about died.
